How We're Different From Traditional Paddock-to-Plate Sellers

Buying a whole cow direct from a farmer is a great Australian tradition — but the way it's typically sold can leave buyers confused, frustrated, or short-changed. Here's how it usually works, and how we do things differently.


The Traditional Way — Hook Weight

Most traditional paddock-to-plate sellers charge on hook weight (also called "carcass weight" or "dressed weight"). This is the weight of the animal after slaughter but before butchering. It sounds fair on the surface — but here's the catch:

- You pay for bone, fat and trim wastage that you'll never take home
- The yield loss (typically 25–35%) comes out of your pocket
- The "great per-kilo price" often isn't so great once you do the maths
- You don't always know exactly what cuts you'll receive, or in what quantities

Let's do the maths. A typical hook-weight price sits around $17/kg — and that usually includes the kill, packaging and their value-added products. On a 240kg hook-weight animal, that's $4,080. Sounds fair — but you'll only take home around 168kg of usable beef once the bone, fat and trim are removed.

That means the real price per kilo of the meat that actually lands in your freezer works out to roughly $24.29/kg — not the $17 you thought you were paying. You're paying full price for the bone and trim that goes in the bin.
