Buying Direct & Knowing Your Farmer

To us, buying from the farmer means knowing exactly who produced your food and where it came from.
There is an important difference between buying from a farmer and buying from a business that purchases meat or produce from farmers, wholesalers or processors and then resells it.
When you buy From Farm to Fridge beef, you are buying beef from cattle raised by us at Shallow Well. We know the animals, the paddocks they came from, how they were managed and what feeding program they were on.
Our involvement does not stop when the cattle leave the paddock. We work directly with licensed processors and stay involved in how our products are cut, portioned, made and packed.
We raise the beef. We stay involved in the processing. We know what goes into our products. And when we sell something produced by another farmer, we tell you that too.
That is what genuine farm to fridge means to us.

Our beef comes from cattle raised by us at Shallow Well. Our beef tallow is also made from our own cattle, using suet only.
The honey we sell is produced from hives on our farm.
We do not produce the eggs ourselves. Our eggs are supplied directly to us by another local farmer. Other produce included in selected farm boxes is also sourced directly from other farmers and producers.
We believe transparency matters. If a product is ours, we will tell you. If another farmer produced it, we will tell you that too

Our beef tallow is made only from suet from
our own cattle. Suet is the firm fat from around the kidneys.

We do not use trim fat or general carcass fat in
our tallow. We deliberately keep the suet separate so the tallow we render is
made from the specific fat we have chosen for that product

Yes. The beef sold under From Farm to
Fridge and Shallow Well comes from cattle raised by us.

We do not simply buy anonymous cartons of
beef from a wholesaler and put our name on them. The traceability back to our
farm is one of the main reasons From Farm to Fridge exists.

Our cattle are raised at Shallow Well at
Calvert, Queensland, under our management and care.

Our range includes premium Speckle Park
beef as well as Wagyu and Wagyu × Charbray cattle.

Different lines are selected and finished
for different eating qualities, so the feeding information on the individual
product or range matters.

How Our Cattle Are Raised

No — and we prefer to be clear about that rather than use one broad claim across every product.
Our 100% grass-fed range remains pasture based from birth through processing and does not have access to grain.
Our grass-fed, grain-polished cattle are pasture raised and continue grazing while receiving a premium grain ration through self-feeders during the finishing stage. They are not placed in a commercial feedlot.
The product or range description will identify which feeding program applies.

It means the animal is raised on pasture, with grass forming the foundation of its diet, and receives a carefully managed grain ration during the final stage to develop marbling, tenderness and flavour.
We use the term because it describes our production system more accurately than pretending every animal follows exactly the same finishing program.

Our current production standard is no hormone growth promotants, no steroids and no routine antibiotics.
Animal welfare comes first. If an animal ever requires veterinary treatment, its welfare will not be compromised for the sake of a marketing claim.

No. We are not organic and we do not market our beef as organic.
We prefer to state our actual farming practices clearly: no hormone growth promotants, no steroids, no routine antibiotics, no Bovaer or methane-reducing feed additives, and no mRNA vaccines.

Beef is a natural agricultural product. Marbling, fat colour, fat cover, steak size, shape and colour can vary between animals, breeds, feeding programs and cuts.
That natural variation is normal. We do not manufacture cattle to a perfectly identical supermarket specification.

Processing, Ingredients & Our Recipes

Our cattle are processed through licensed
meat-processing facilities.

Farm direct does not mean unregulated
processing. It means the beef remains connected to the farmer while slaughter,
butchering, value-adding, packing and labelling are carried out through the
appropriate licensed food-safety system.

Very involved.
We do not simply send cattle away and wait for anonymous boxes of meat to come back. We work directly with our processors and are hands-on in setting and checking the specifications for our products.
• Cut thicknesses and portion sizes are set to our specifications.
• Pack sizes are chosen to suit the way families actually cook and store meat.
• Packaging is checked so the product comes back prepared and presented correctly.
• We supply or approve many of the whole-food ingredients used in our value-added range.
• We specify the recipes to be followed rather than simply accepting a processor's standard commercial recipe.
• We specify gluten-free ingredients and products where a product is sold as gluten-free.
• For cured products, we specify the curing ingredients and process rather than defaulting to a standard commercial cure.
• We check that the finished product is something we are prepared to put the Shallow Well and From Farm to Fridge name on.

Yes — every recipe is ours.
Our sausages, rissoles, meatloaves, patties and other value-added products are not generic processor recipes with our label added afterwards.
They come from our farmhouse kitchen: recipes and flavours Kate grew up with, including food her mother cooked for the family, along with recipes Kate later cooked for her own children and developed over the years.
Those family recipes are then adapted into consistent production recipes so the processor can make them to our specification.
They are our farmhouse recipes, made with our beef and built from food our family has eaten for generations.

Where practical, we build our recipes
around recognisable food ingredients rather than relying on generic commercial
premixes.

That means we deliberately select the
ingredients and seasonings we want in the product, and we work with the
processor so the recipe is followed consistently.

The ingredient list on the individual
product label remains the final source of truth for that product.

Some products in our range are specifically produced and sold as gluten-free, including products where we deliberately specify gluten-free ingredients.
Not every product should be assumed to be gluten-free. Always check the individual product description and label.
If you have coeliac disease, a serious allergy or a severe intolerance, check the current product label and contact us if you need further ingredient or processing information before purchasing.

For cured products made to our no-added-synthetic-nitrates-or-nitrites specification, our current curing method uses beetroot juice rather than a standard synthetic nitrate/nitrite cure. We specify the curing ingredients and process used by the processor.
Beetroot is a plant ingredient and can naturally contain nitrates. For that reason, we describe these products according to the actual recipe and process and avoid implying that naturally occurring nitrates cannot be present.

Yes. Our larger beast orders are designed around how your household actually eats.
Depending on the cut, you can choose options such as steak thickness, pack quantities, roast sizes, diced beef, crumbed steak, fresh or corned silverside, mince and selected value-added products.
There are natural limits because one animal can only produce a certain amount of each cut. A cut used one way cannot also be used a second way

Because a freezer full of beef should be useful on busy family nights, not just full of raw cuts that still need a plan.
Our beast orders can include products such as sausages, rissoles, patties, meatloaf and crumbed beef made from our own beef to our recipes and specifications. The exact inclusions depend on the current beast package and your available choices.
It also helps us use the animal intelligently and turn suitable cuts and trim into practical family meals rather than treating value-added products as an afterthought.

Because every steak, roast, diced pack and mince pack comes from a finite part of the animal.
For example, choosing a muscle as steaks means that same muscle is no longer available to become a roast, diced beef or mince. The cut sheet is there to help you decide how you want your share of the animal used.

Boxed weight is the finished, packaged product you actually take home.
It is different from live weight and dressed or hanging weight.
A dressed carcass still includes bone, fat and other weight that can be lost through trimming, boning and processing. The final boxed yield also changes depending on whether you choose bone-in or boneless cuts and how heavily the carcass is trimmed.

Exact finished weight varies because cattle are not manufactured to a fixed size, and your cut choices also affect final yield.
For a bulk order, we give you an expected range for planning purposes. The final order is based on the actual finished, packaged product produced from your animal and the agreed order specification.

Because the number only makes sense when you know what weight you are being charged against.

A hanging-weight price is charged before the carcass is fully butchered into the packaged meat that goes into your freezer. A boxed-weight price is charged against the finished product.
That is why a low advertised hanging-weight price should not be compared directly with a finished boxed-weight price. To compare fairly, divide the total amount paid by the kilograms of packaged product actually received

During butchering, bone, excess fat, connective tissue and trim may be removed, and moisture can also be lost. Boneless cutting choices generally reduce boxed weight further than bone-in choices.
This is normal yield loss, not missing meat.

Our bulk-beef model is designed around charging for the finished packaged product rather than hiding bone and trim weight inside a carcass-weight price.
Bones, offal, suet and other secondary products can be handled separately according to the order and availability

Yes, subject to availability and the order type.
There is only a limited amount of bones, offal and suet from each animal, so quantities cannot always be guaranteed. If these are important to you, request them when completing your order.

For many whole and half beast products, yes.
We know a two-person household does not necessarily want the same packet size as a family of six. Where the cut allows, our cut sheet gives you portion and pack-size options so the beef fits the way your household cooks.

Our beef is portioned, labelled and packaged for chilled or frozen storage according to the product and processing specification.
Vacuum packing is used where appropriate, and individual labels provide the product, storage and date information relevant to that pack.

Our everyday retail range is predominantly sold frozen. Whole and half beast orders are different: they are supplied fresh/chilled by default unless the customer specifically asks us to freeze the order before collection or delivery.
For frozen retail products, follow the storage and defrosting directions on the individual product label. For fresh whole and half beast orders, refrigerate or freeze the packs promptly once you receive them and follow the label directions for that product.

Keep the product continuously frozen and follow the best-before date and storage directions printed on the individual pack.
Once thawed, follow the label directions for that product. Do not rely on a general website timeframe if the pack gives a more specific instruction.

It depends on the weight of your order, whether the packs are bone-in or boneless, how they are shaped and how efficiently your freezer can be packed.
As a practical guide, do not order a large beast share based only on the advertised litre capacity of a freezer. Leave room for airflow and for the other food already stored in it.
If you are unsure, tell us what you are ordering and the freezer you have and we can help you judge whether it is realistic.

A custom farm-direct order has to move
through scheduling, processing, butchering, value-adding, packing and labelling
before it is ready.

As a general planning guide, allow around
3–4 weeks for a custom whole or half beast order, although processor
availability and the individual order can affect timing.

A deposit secures the animal and processing allocation for a large custom order.
Once the order is processed, the final balance is based on the finished order and the agreed pricing structure. Any optional processing or packing upgrades are added according to the order.

The Beef Bus, Delivery & Farm Boxes

The Beef Bus is our mobile farm-direct shop and collection point.
Instead of expecting every customer to drive to the farm, we bring the farm closer to you through markets and scheduled collection locations. Customers can also order ahead and collect from nominated Beef Bus stops.

Yes. We offer online ordering with delivery across our nominated service areas, as well as market and collection-point pickup.
Because routes and locations change, customers should check the current delivery information and Beef Bus calendar at the time they order.

Yes. We offer scheduled collection opportunities through The Beef Bus and selected market or pickup locations. The current calendar shows where we will be and when orders need to be placed

Our farm boxes are built around traceability and direct relationships.
The beef is ours. Our beef tallow is made only from suet from our own cattle. The honey comes from hives on our farm.
The eggs are supplied directly by another local farmer, and other produce in selected boxes is sourced directly from other farmers and producers.
The goal is not to pretend we personally grow every item. The goal is to keep the supply chain short, know who produced the food and be honest with customers about where it came from
