A hard-working cut that turns to butter if you give it time. Three hours in the oven or all day in the slow cooker and it falls apart. Cheaper than the fancy roasts, and better for feeding a table.

- Storage: Sold frozen. Use within 3 days of defrost. For best results, defrost in the fridge overnight before roasting.
