That's the reason most people won't cook with it, and it's fair enough. This doesn't. Camel suet renders down to something almost completely neutral — no aroma, no beefy finish, nothing fighting whatever you've put in the pan.
And here's the part nobody else can say: everyone renders the hump. We render the suet — the fat from around the kidneys. There's a fraction as much of it on the animal, which is why nobody else bothers with it, and why this is the only one of its kind we know of.
Softer than beef tallow, so it scoops straight out of the jar. High smoke point. Roast with it, fry with it, sear with it.

Beef tallow is rendered fat. Our beef tallow is made exclusively from suet—the firm fat around the kidneys—from our own cattle raised at Shallow Well. We deliberately do not use trim fat or general carcass fat.
Our tallow comes from cattle raised by us at Shallow Well. Depending on the specific cattle line, our animals are either 100% grass-fed (pasture-based from birth through processing) or grass-fed and grain-polished (pasture-raised with a grain ration during finishing).
Our beef tallow is rendered using suet only, sourced directly from our own Shallow Well cattle. We deliberately keep the suet separate from general carcass or trim fat to ensure it is made specifically from the high-quality fat chosen for this product.
