If you choose to convert all trim to mince, it can be supplied as either all 80 CL, or a mix of 90–95 CL and sausage mince (suitable for sausage rolls). All trim cannot be converted strictly to 95 CL mince.

Processing Notice
Unused cuts and trimmings are converted into additional mince and/or value-added products according to the customer's selections. Final quantities depend on the available trim and yield from the individual animal.
Important Information
Bones are not included in the body price and may be purchased for $5.00/kg if requested.
Offal is not included in the body price and, if available, may be purchased for $10.00/kg.
Standard Silverside is included in the body price.
Nitrate-Free Corned Silverside incurs an additional $4.00/kg charge on the silverside cut.
Cryvac or skin pack is available at an additional $2.00/kg
Sausages, patties and rissoles are tray and skin packed.
Other packaging requirements will be quoted separately
Pack weights are target sizes and may vary slightly.
Every animal is different, cut sizes and final yield will vary.
Value-added quantities are calculated from the available trim and may vary slightly between animals.
Final selections are subject to practical cutting and processing requirements.
